Lemon Tart Filling/Lemon Meringue Pie

Ingredients 

• 1 cup sugar 

• 1 cup cold water 

• 1 egg 

• Juice of one lemon 

• 1 level tablespoon cornflour 

• 1 level tablespoon custard powder

• Water to mix flours 

• 1 teaspoon butter 

 Method 

Beat sugar, cold water, egg and lemon juice together, then bring to the boil. Blend the cornflour and custard powder together with a little water, then add to the mixture. Cook until thickened, then add 1 teaspoon butter. Pour into baked tart pastry. Top with either coconut, meringue or cream, or marshmallow.

Lemon Meringue Pie 

Meringue Ingredients 

• 4 egg whites

• 3 tablespoons caster sugar

• 1 teaspoon lemon juice

• pinch of salt

Beat egg whites until stiff with sugar and lemon juice, and pinch of salt. Spread over top of pie, taking care to bring meringue to edge of pastry. Brown in a very slow oven.
