Tart Pastry

Ingredients 

• ½ cup plain flour 

• ½ cup SR flour 

• ½ cup cornflour 

• 85g soft butter or margarine 

• ½ cup sugar – icing or caster – or ¼ of a cup of each 

• 1 egg yolk 

• Squeeze of lemon 

 Method 

Sift dry ingredients and rub in butter. Add sugar and yolk and 2 or 3 tablespoons of cold water. Roll out dough on a board or piece of baking paper for easy transfer to greased pie dish. Bake in a moderate oven.
