Ingredients
• 225g Marie biscuits
• 115g butter
• 1 can ideal milk (same as carnation evaporated milk) – well chilled and whipped
• 2 packets Philadelphia cream cheese
• 1 cup sugar
• 1 teaspoon vanilla
• 2 lemons – juice and rind
• 1 packet lemon jelly (boiling water to make 1 cup)
Method
Crush biscuits (fine) and add melted butter and mix really well. Press into tin. Bake 12 minutes in a moderate oven. Whip milk in large bowl. Squeeze lemon juice into cup and fill with boiling water, then pour into a small saucepan, add rind and lemon jelly dissolved. Whip cream cheese in small bowl with sugar and vanilla, add jelly mixture to cheese then add both to milk mixture and pour into mould. Sprinkle with nutmeg and cinnamon.
