Light Fruit Cake 

light fruit cake recipe

 Ingredients 

• 225g butter 

• 1 large cup sugar 

• 2 ¾ cups plain flour 

• 1 teaspoon baking powder 

• 3 eggs 

• 6 tablespoons sherry or milk 

• 1 ½ cups sultanas 

• ½ cup chopped almonds 

• ½ cup candied peel 

• Pinch salt 

• Lemon essence 

 Method 

Line a ½ pound cake tin with 2 thickness brown paper. Cream together butter and sugar. Add eggs one at a time, then gradually add sherry. Add sifted salt and flour and baking powder then fruit. Bake 1 ½ hours.
