Ingredients
• 3 egg whites
• ¾ cup caster sugar
• 1 level tablespoon cornflour
• 1 ¼ cups coconut
• 1 teaspoon vanilla essence
Method
Beat egg whites until stiff. Add half the sugar, beat until mixture holds its shape. Fold in cornflour and remaining sugar, then coconut and essence. Cook over boiling water until crust forms, stirring now and again. Remove from heat, put in greased slide. Bake in slow oven 30-40 minutes.
